A day for a sweet smiley pastry, the Empanada

I just learned that April 8th is National Empanada day. It brings a smile to my face, and reminds me of the shape it has, a smile shape.

If we are going to give a day to everything in the world, besides important events of course, I supposed it is important to give a day to the most remarkable ones.  I am sure most Latinos would agree with me, Empanadas deserve a day!   Not to necessarily celebrate, but at least a reminder to make them or eat them.

At home, growing up, one Saturday a month was Empanada Day.  The house would smell like Empanadas, filled with cheese, mermelada, meat, chicken, the options were endless. Oh how fun it was to sneak in the Empanada bowl!   Probably the other three Saturdays we would get to eat Salteñas (type of Bolivian empanada).

If you talk to a Latino about Empanadas, I am sure they will tell you one or two stories in their lives in which somehow an Empanada was present.

Why Empanadas are so popular among Hispanics and non Hipanics?

  • For Latinos somehow Empanadas bring not just the good flavor, but also sweet memories of home.
  • They represent our culture.  I grew up on them, eating empanadas for me is like eating PBJ’s for americans. .
  • You can eat them with your hands.
  • You can fill them with anything you want, cheese, mushrooms, meat, chicken.  Last trip to Bolivia I had them infused with Coca leaf.
  • You can fry them or bake them!
  • Depending on the size, the filling and if they are baked or fried you can use them during breakfast time, as appetizer, snack, tea time, or perhaps even for dessert.

Confession, I do not know how to make the repulgado or sealing of the Empanada, but that is not a problem  I use my Empanada (and Churro) maker.  I bought it over Amazon, here is the link for you to check it out.
